Eggplant bread

3 eggs,beaten
1 cup oil
2 cups sugar
3 tsp vanilla
3 cups flour
1 tsp baking soda
1 tsp salt
1/2 tsp baking powder
1 1/2 tsp cinnamon
3/4 tsp nutmeg
2 cups shredded eggplant- squeeze out extra liquid
Directions: Combine all ingredients in a mixing bowl, except eggplant. Once all is blended well, fold the eggplant shreds into the batter till they are nicely mixed. Spoon batter into a large loaf pan lined with parchment paper. Bake in the oven at 350 for 1 hour or until tested with a fork and it comes out clean. Let stand for 10 minutes to cool and remove from the loaf pan. Serve with butter or jam, or both!
