Fresh Pumpkin Pie

I’ve made this for many holidays – easy and yummy!

2 cups cooked pumpkin (see below)
9” pie crust
1 teaspoon ginger
1 teaspoon cinnamon
1/2 teaspoon salt
4 eggs
3/4 cup maple syrup
1/2 cup milk
1/2 cup cream

Cut pumpkin in half, remove seeds, lightly oil the cut surface and place cut side down on a baking pan.  Bake at 350 degrees for about an hour, until tender.  Cool.  Scoop 2 cups pumpkin into food processor and add the rest of the ingredients; process until smooth.  Pour filling into prepared pie crust.  Bake at 350 degrees for about 1 hour, or until a knife inserted 1” from edge of pie comes out clean.
