I used almost all the veggies in my basket last night by making this super simple dish. It turned out crazy good!
2 red onions, chopped
1 head garlic, peeled and chopped
cherry tomatoes (cut in half)
eggplant (unpeeled, chopped)
1 tablespoon dried basil
additional olive oil to drizzle
grated mozzarella cheese
Saute onions in olive oil in large pot until tender. Add remaining ingredients, cover and simmer for 1 hour. Drizzle with olive oil. Top with mozzarella cheese.
