Roasted Radishes with Curry Sauce

1 lb radishes trimmed and halved
2 tsp grape seed oil
¼ tsp salt
¼ tsp black pepper
½ cup plain yogurt or sour cream
1 tsp curry powder
1 tbsp lemon juice

Preheat oven to 400F, line baking sheet with parchment paper. Toss radishes with oil, salt, and pepper.

Place in oven and bake for 35 minutes, stirring once halfway, or until wrinkled and tender.

Meanwhile in a small bowl, whisk together yogurt (or sour cream), curry powder and lemon juice. Serve roasted radishes with curry sauce.

Low in Cal and abundant in Vitamin C!
