This is amazingly delicious and super easy!
eggplant, cubed, unpeeled
olive oil
marinara sauce
mozzarella cheese
Place eggplant in casserole dish and drizzle with olive oil. Add marinara sauce and top with mozzarella cheese. Bake in 350 oven for about 30 minutes. Top with parmesan cheese and hot pepper flakes, if desired.
