Happy Monday! Are you all ready for tomatoes? I mean, really ready? We try to do our best to keep a lot of variety in the weekly shares and alternate items from week to week so you don’t get too overwhelmed, but tomatoes are a bit of a different story. When we have them we just have to share them. So we hope you are all ready for tomato season! If you begin to run out of ideas for how to use all your tomatoes I recommend coring and freezing them in freezer bags (cherry tomatoes can go in whole). When you want to make pasta sauce or soup in the winter, just pop a bag out of the freezer and – bam! – fresh tomatoes.

This is also the first week for cucumbers and eggplant. Hope and Hilary started the eggplant much earlier this year and so we are getting to enjoy these sooner than usual. Cucumbers, tomatoes, and eggplant are what I think of as true summer vegetables and there is no better sign that we are in the thick of the season than a basket full of these crops. If you still have summer squash, parsley, and basil left over from the past few weeks (like me!) check out the recipe below. I will definitely be trying it!

Payments for the second half of the season are due on July 25th. Hilary sent out payment reminders last Monday for those of you who have a balance due. We are so grateful to all of you for supporting our local farmers and keeping the CSA going strong after all of these years!
